vegetables arranged around grains that spell out "vegan"

Welcome to Vegans of Dreamwidth! I created this community to talk about vegan stuff because all the other vegan communities seem to be hibernating. All vegans and the vegan-friendly are welcome! See profile for posting guidelines. They amount to: Don't post anti-vegan stuff and don't post images of dead animals or animal suffering.

Favorite Recipe Blogs?

What vegan recipe blogs does everyone like? I personally love:

From My Bowl
Nora Cooks
PlantBasedRd
and the vegan tags on A Couple Cooks

From my Bowl is my all-time favorite though. I've never made anything from her that wasn't super delicious. My favorite recipes are the "dump and bake" casseroles where you put dry rice or pasta with a flavored broth and different veggies into a casserole dish and bake for about an hour. So easy with almost no hands-on time. <3

If you want one to get you started, my favorite is the No-Boil Pesto Pasta but head's up that you do need to make or buy a vegan pesto *before* you start making the recipe.

Spring holiday menus

What is everyone cooking/eating for St. Patrick's/Easter/Passover/Ramadan/spring?

I had hoped to have vegan corned beef from Unreal Deli but the company had fulfillment issues and could not fill my order. So now I'm making colcannon for St. Patrick's.

Still haven't figured out what to make for Easter. I was thinking of lentil shepherd's pie. In the winter holidays I made one of those fake meat roasts and it did not agree with me. It was the second brand I'd tried that had this problem so I think those roasts are just not for me. Is shepherd's pie too heavy? Maybe a pasta primavera? I already ordered vegan chocolates so I'm set for chocolate bunnies.

Please share your meal/cooking ideas for a festive spring menu!
